Clean Hersey Cake!

I am so so thrilled about this one. The cake itself was dark, rich, moist as hell, and super tasty. The frosting, well, could use a little work, but I was still capable of devouring plenty


Oh, and please excuse the lame strawberry décor, I have a 5 year old who likes to help...............


Ingredients:
 
2/3 cups Agave Syrup (I used Light blue)
1-3/4 cups WHITE whole wheat flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt (sea salt)
3 egg whites
1 cup unsweetened almond milk
1/2 cup unsweetened applesauce ***
2 teaspoons vanilla extract
1 cup boiling water
 
 
*** In case you were not already aware, in Clean Baking, many times fruit purees, such as applesauce, will take the place of the fats (i.e. butter and oil) in your recipes. So, if you are really starting to bake clean, keep a big tub of the unsweetened applesauce in the fridge!
 
 
Instructions:
 
1: Heat oven to 350°F. Grease (Spray with Pam) 2 9 inch round baking pans or one 13x9 pan.
2: Stir together Agave, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs whites, milk, applesauce and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

3: Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean (mine only took 29 minutes exactly). Cool 10 minutes; remove from pans to wire racks. Cool completely. 
 
If you are using a 9x13 sheet pan, bake for approximately 5 minutes longer.
 
 
 
FROSTING: (I eyeballed these amounts, my apologies)
 
1cup non fat plain Chobani
2 T fat free cream cheese
2 T PB2
1 T Stevia
1.5 scoops vanilla whey
(the frosting was somewhat thin, which created the "drip" effect down the sides)

Avo Frozen Yogurt

Oops I did it again... something awesome.
 
 


What you need to be awesome today:

-4 ripe avocados
-1 cup low fat natural plain yogurt (it was hard for me not to use Greek, but it paid off)
-1/2 cup unsweetened almond milk
-1/2 cup honey
-1/2 cup fresh lime juice (about 6 small limes)
-pinch of sea salt
-1.5 quart ceramic or glass baking dish

What you will do:
1: Cut, peel, and cube avos
2: Place all ingredients in food processor. Process for 2 minutes, stopping every 30 seconds to scrape down sides with spatula
 
*Now, the smell emanating from the food processor at this point is not the most appealing. Don't let that deter you!!!

3: Freeze for 30 minutes in glass dish
4: Scrape down sides and whisk, re-blending the ice crystals.

Repeat step 4 two more times (it will get harder to whisk each time)

5: Place back in freezer for 2-3 hours or until ready to serve.

(if it is too hard, let soften for 10 minutes)

I garnished mine with a frozen tropical fruit blend and unsweetened FLAKED coconut. I enjoy the flakes over the shreds.

I'm Blogging?

To blog or not to blog?

Well, to blog...

The only social media I currently participate in is Instagram (yes, I am slightly obsessed with it). As I get more and more involved with the "InstaFam" and more detailed with my posts, it gets harder and harder to convey the details and real meanings of my messages, as I am limited to typing on my phone. Alas, my first blog.

After I get being a mother, daughter, sister, and girlfriend out of the way, I am an avid Home Chef a Work-out-aholic. Of course I have a full time job on top of it all, but, eh, whatevs.

Healthy, mostly clean, dishes are my "thing". Most recipes are adapted from others and altered to meet my dietary wants and needs. Others are simple things I have come up with along the way that are quite enjoyable. If I can convey the importance of healthier foods to at least one person, or have someone cook one of my recipes in their own home, I will feel accomplished. If only one human copies one of my workouts to their phone and takes it to the gym with them, or buys a Polar FT7 watch because I highly recommended it, I'll feel like there is a purpose to what I am doing.
 
The simplest changes in your life can lead to the biggest rewards.

Now, let's get to work!
